
Cinnamon, Ginger & Rosemary Biscuits recipe

Why these biscuits are special

Ingredients:
- 256g plain flour
- 128g light brown sugar
- 128g butter (softened)
- ½ tbsp ground cinnamon
- ½ tsp dried green ginger rosemary
- ½ tbsp ground ginger
- ½ tbsp honey
- 35ml milk
Method:

Mix the butter and sugar together in a medium-sized mixing bowl until smooth and creamy.

Stir in the honey, dried rosemary, ground cinnamon, and ground ginger into the butter-sugar mixture.

Gradually add the plain flour to the mixture, folding it in gently. Then slowly add the milk until the dough comes together. You may need to add a little more flour if the dough feels too sticky.

Lightly dust a chopping board with flour. Roll out the dough to a thickness of roughly 5mm. Be sure to keep the rolling pin dusted with flour so that the dough doesn’t stick to it.

Using a cookie cutter of your choice, cut out fun shapes like circles, hearts, or any other designs you like.

Place the biscuits onto a baking tray covered in parchment paper. Glaze each one with milk to give them a lovely golden colour as they bake.

Chill them in the fridge for 10 to 20 minutes, and preheat the oven to 190°C (170°C fan assisted).

Bake the biscuits for 20-30 minutes, or until they are golden and crisp around the edges.

Allow the biscuits to cool slightly on the tray before transferring them to a wire rack to finish cooling completely. Then, pour yourself a cup of tea, sit back, and enjoy these warm, spiced biscuits!
