
Mini Egg Easter Cookies recipe
These crisp, chewy, and chocolaty cookies are the perfect treat for Easter! Ingredients:
- 400g plain flour
- 230g butter (softened)
- 100g granulated sugar
- 165g brown sugar
- 2 eggs (1 whole egg and 1 egg white)
- 1 tsp baking powder
- 1 pack of Cadbury’s Mini Eggs
- ½ dark chocolate bar
- A splash of vanilla extract
- A pinch of salt

Start by mixing the butter, vanilla extract, salt, and sugars together in a bowl until smooth and creamy.

Beat in the eggs one at a time, using one whole, then only the egg white from the second. Doing this will make the cookies fluffy and light, but you can add both yolks if you prefer.

Sift the baking powder and flour into the mixture, then slowly fold it in until everything is well combined.

Chop the dark chocolate into small chunks and stir them into the dough. Break up the Mini Eggs and put the larger pieces to one side, then add the rest to the cookie mix and stir again.

Scoop out small amounts of dough and roll them into balls. Place them on a baking tray lined with parchment paper, leaving a decent amount of space between each cookie.

Refrigerate the dough for 30 minutes to 1 hour to help the cookies maintain their shape and not spread when baking.

Preheat your oven to 200°C (180°C fan assisted). Once the dough is chilled, gently flatten the balls of dough with your palm and press in the larger Mini Egg pieces.
