Ingredients:

  • 400g plain flour
  • 230g butter (softened)
  • 230g granulated sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 30g mint leaves (or more for a stronger taste)
  • 100g chocolate chips
  • A splash of green food dye
  • A splash of vanilla
  • A pinch of salt

Method:

  1. Start by mixing the butter, salt, and sugars together in a bowl until smooth and creamy.

  2. Beat in the eggs one at a time, then thoroughly mix in the food dye.

  3. Sift the baking powder and flour into the mixture. Slowly fold it in until everything is well combined.

  4. Chop the dark chocolate into small chunks and stir them into the dough. Wash the mint leaves, then finely chop them up (or dry them and put them through a food processor) and stir them in as well.

  5. Scoop out small amounts of dough and roll them into balls. Place them on a baking tray lined with parchment paper, leaving a decent amount of space between each cookie.

  6. Refrigerate the dough for 30 minutes to 1 hour to help the cookies maintain their shape and not spread when baking. Once the dough is chilled, gently flatten it with the palm of your hand.

  7. Preheat your oven to 200°C (180°C fan assisted), and bake the cookies for 15-20 minutes. Check the cookies after 10, then add tin foil over the top for the remaining few minutes, this will help them keep their green colour.

  8. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely, then enjoy!
